PAPPAD CHAPATHI WITH MIXED VEGETABLE KURMA

PAPPAD CHAPATHI:



INGREDIENTS:
Wheat flour – 1 cup
Milk – ¼ cup
Masala papad-5
Ghee – 2 tsp Salt to taste.
METHOD OF PREPARATION:

1) Make dough with wheat flour,ghee,milk,salt and sufficient water.
2) Deep fry the papad or fry them directly from the flame.
3) Powder the fried papads.
4) Make small dough balls and stuff them with papad powder and roll them to make chappathis.
5) Roast chappathis on both sides. Serve hot with kurma.
MIXED VEGETABLE KURMA :


INGREDIENTS:

Potato - 1(small) ; peeled and chopped.
Beetroot- 1 (small) ; peeled and chopped.
Beans - 4-5 ; chopped
Carrot - 1 (medium) ; chopped
Onion - 1 ; finely chopped
Tomato - 1 ; finely chopped
Green Chillies - 2
Mustard , Jeera - 1/2 tsp each
Ginger garlic paste - 1 tsp
curry and coriander leaves
Chilli powder/kurma power - 2 tsps
Coriander powder - 1 tsp
Coconut (grinded) - 1/4 cup
Salt to taste

METHOD OF PREPARATION :

1) Heat oil in a kadai.Add mustard and jeera,when it pops out add green chillies,curry leaves and fry for 1 minute.
2) Then add finely chopped onion and fry till golden brown.
3) Then add tomato and wait till they form thick gravy.
4) Add ginger garlic paste and fry for 2 minute,till the raw smell leaves.
5) Add the powders and salt,and fry them they gets mixed with the gravy.
6) Then take a cup of mixed vegetables and add to the gravy.Fry them for 2 minutes in a slow flame.
7) Add grinded coconut and a cup of water . Allow the mixtures to boil ,till vegetables a well cooked and oil gets separated.
8) Finally add coriander leaves.Turn off the flame and serve hot with parathas/rotis.

QUICK SWEET


INGREDIENTS:
Channa Dal Flour - 1 cup
Sugar - 1/2 cup
Ghee as per your requirement
METHOD OF PREPARATION:
1) Heat kadai.Add channa dal flour and fry them till the raw smell leaves.
2) Meanwhile,boil sugar with little water and get its syrup.
3) Once the smell leaves and syrup is ready,add syrup to channa dal flour and mix well.add ghee and stir till the mixture leaves the pan.
4) Transfer the mixture to a greesy plate(apply ghee to a plate).
5) Once it gets cooled,cut them to ur shapes.
Ready to serve.

NOODLES BIRIYANI






INGREDIENTS :


Maggi Noodles Packet - 1 (medium)
Egg - 2 
Tomato - 1
Onion - 1
Green Chillies - 2
Ginger - garlic paste - 1 tsp
Fennel Seeds - 1 tsp
Cinnamon - 2
Cloves - 1
Bay leaves - 1
Salt to taste
Chilli powder - 1/2 tsp



METHOD OF PREPARATION :

1 ) Heat oil in a kadai .Add chopped onion and fry till transparent.
2) Add chopped tomato and fry till it mixes well with onion.Then add beaten eggs with little salt and sambar powder.
3) Add ginger garlic paste,chopped chillies,powdered (fennel seeds,cinnamon and clove) masala and bay leaves.
4) Then add chilli powder and maggi masala powder.
5) Boil noodles with  1 1/2 cups of water and allow it to boil with a spoon of oil.Once done,strain the remaining water.
6) Finally, mix noodles and egg masala with it .


Garnish with coriander leaves.Serve hot with raitha.

CAPSICUM RICE


INGREDIENTS:


  • Capsicums - 3 big
  • Rice - 1 cup
  • Turmeric powder - 1/4 tsp
  • Cashewnuts - 8-9
  • Mint leaves
  • Salt to taste

To roast and powder :

  • Red chilies - 8
  • Coconut pieces - 4
  • Peanuts - 1 tbsp

METHOD OF PREPARATION :


1) Take a frying pan and with 1 tsp oil in it. Fry the red chilies, coconut pieces, peanuts. Remove the pan and allow it to cool.

2) Grind and blend the mixture to make a fine powder.

3) Cook the rice till it is 3/4 cooked. 

4) Heat oil in a pan , add sliced onion , capsicum, cashew nuts and saute till tender. 


5) Then , add the mint leaves and the grinded powder, mix it well with the mixture.


8) Finally,add cooked rice and mix it well. Cover with a lid and remove from the flame after 5 minutes. 


Serve hot with raitha or any vegetable kurma.

DAL COCONUT CHAPATHI


INGREDIENTS :


Toor dal/Moong dal-1/2 cup
Wheat flour-2 cups or as per your requirement.
Turmeric powder-1/2 tsp
Cumin seeds(jeera)-5 tsps
Salt to taste
Grated coconut - 1/4 cup


METHOD OF PREPARATION :

1) Boil dal with turmeric powder and 2 tsps of oil in pressure cooker for 7-8 whistles.check whether the dal is well cooked.
2) Knead flour,mashed dal,cumin seeds,salt and grated coconut in a big bowl with little water to make a thick dough.Dough should be stiff enough to roll without extra flour. Add a spoon of oil and leave for 20 minutes.
3) Make small dough balls,roll them to chapathis.
4) Heat a dosa tawa. once hot,put in a chapathi . Flip the chapathi over and cook the other side until golden brown.

Serve hot with curries or vegetable kurma.

DAL POORI




INGREDIENTS :



Toor dal/Moong dal-1/2 cup

Wheat flour-1/2 kg or as per your requirement.

Mustard seeds-1/4 tsp

Onion(big)-1

Turmeric powder-1/2 tsp

Cumin seeds(jeera)-3 tsps

Salt to taste



METHOD OF PREPARATION :



1) Boil dal with turmeric powder and 2 tsps of oil in pressure cooker for 7-8 whistles.check whether the dal is well cooked.



2) Heat oil in kadai.Add mustard seeds,cumin seeds.When it splutters,add finely chopped onion.Fry untill onion becomes transparent.



3) Add cooked,mashed dal to the mixture.Add salt to taste.Leave in medium flame for 5-10 mins.



4) Turn off the flame and wait for 10 mins untill it cools down.



5) Then transfer the mixture to a big bowl and add wheat flour to it .Add little water if needed.Make a thick dough.Dough should be stiff enough to roll without extra flour.



6) Make small dough balls,roll them to pooris.



7) Heat plenty of oil in a kadai until very hot. Put in a poori and immediately start flickering hot oil over the top of it with a spatula so that it will swell up like a ball. This should take only a few seconds. Flip the poori over and cook the other side until golden brown.



Serve hot with curries or vegetable kurma.

MY SECOND BEAUTIFUL BUTTERFLY AWARD,CELEBRATED WITH PANEER-POTATO MASALA


PANEER - POTATO MASALA :





INGREDIENTS :


Paneer - 200 g
Potatoes - 100 g
Onion - 1 (medium)
Mustard seeds - 1/2 tsp
Cumin seeds - 1 tsp


FOR MASALA :

Green chillies - 2
Cumin seeds - 1/2 tsp
Fennel Seeds - 1/2 tsp
Coriander Powder - 1 tsp
Coconut - 3 pieces
Cloves - 1
Cinnamon - 2
Cashews - 6-9
Turmeric powder - 1/2 tsp
Salt to taste
Red chilli powder - 1 tsp
Peanuts - 1 /2 tsp

METHOD OF PREPARATION:


1) Pressure cook peeled and chopped potatoes for 3 whistles.Leave them aside till the steam leaves. Meanwhile soak paneer in hot water for 5 minutes and then cut into small cubes.Dry fry paneer and keep them aside.
2) Heat oil and add the mustard,cumin seeds and curry leaves.When the seeds begin to splutter, add chopped onion and saute till tender.
3) Add potato and mix them well with onion.
4) Add grinded masala with a cup of water and mix them well; bring to a boil and simmer, for 10-15 minutes.
5) When starts boiling ,add paneer and allow to boil for 10 minutes.Remove from the flame when the oil separates.Serve hot with rice as side dish.

APPLE MILKSHAKE

Sending this recipe to EC's WYF - "Party Food" Event




Here comes this simple healthy milkshake,


INGREDIENTS:

Apple - 1
Milk - 1 cup(boiled)
Sugar for your taste

METHOD OF PREPARATION:

1) Peel the skin of apple and cut into small pieces.
2) Take a cup of boiled milk.
3) Grind apple,milk and sugar in a juicer/mixer grinder.Mix them well for juice consistency.Apple juice is ready to serve.

METHI CHAPATHI


INGREDIENTS:

Methi leaves-250 g
Onion-1
Chilli powder -2 tsps
Turmeric powder-1/2 tsp
Cumin seeds-1/4 tsp
Salt to taste
Wheat flour- 2 cups


METHOD OF PREPARATION :

1) Knead a soft dough with wheat flour, methi leaves, chopped onion, chilli powder, turmeric powder, cumin seeds and salt.
2) Make small dough balls and roll them to form chapathis/parathas.
3) Preheat a cast-iron tawa over medium heat. Place the rolled dough on the palm of one hand and flip it over on to the tawa. When the color changes on the top and bubbles appear, turn it over. Spray oil over it. When both sides are done, use kitchen tongs (chimta) to remove the chapati from the skillet. 

Serve chapathi with chutneys/vegetable kurma.

APPLE MILK HALWA AND APPLE PAYASAM/KHEER

APPLE MILK HALWA :




INGREDIENTS:

Apples - 2

Sugar for ur taste

Ghee as u wish.

Cardamom - 5 -7

Almonds and Cashews - as you prefer

Turmeric powder - a pinch for colour(optional)
METHOD OF PREPARATION:

1) Boil 1/2 litre of milk with grated peeled apples and sugar.Stir using a long handled spatula till sugar gets dissolved completely.When well mixed, leave in slow flame.

2) Stir them for every 5 minutes gradually.

3)After apple is cooked well,wait till the mixture gets into halwa proportion.

4) Heat ghee in a pan.fry cashews,almond and elachi till they gets roasted.

5 ) Finally add them to halwa and mix them


APPLE PAYASAM/KHEER :




INGREDIENTS:

Milk -1/2 litre
Sugar - 4 tbsps
Apples - 2
Cardamom - 4
Almonds - 4
Pistas - 4
Cashews - 8 -10


METHOD OF PREPARATION:

1)Boil the milk to boil in a heavy based pan. Add the sugar and cook gently until the mixture is reduced by half.
2)Grate the apples and add to the milk. After boiled remove from the heat at once.
3)Meanwhile roast split cardamom, pistas,cashews and almonds with ghee in a pan.Can use as you wish.
4)Finally add to the kheer.Serve hot or cold.

KOLLU IDLI (Horse gram Idli)
